Rice with cod and cauliflower A delicious dish! With salmorreta, the typical dressing of Alicante rice dishes that are so delicious; We especially make this rice at home in the time of Lent and Easter but on any day of the year it is a success because it is delicious.
Ingredients Rice with cod and cauliflower:
500 g Desalted cod
2 Grated pear tomatoes
4 Peeled garlic cloves
3 Garlic cloves with their skin
4 Sprigs of fresh parsley
1/2 Small minced onion
250 g Chopped cauliflower
350 G Bomba or Albufera rice (Round)
1 Liter Fish broth or stock
Extra virgin olive oil
To taste Salt
Preparation Rice with cod and cauliflower:
1 First we prepare the salmorreta: We put a little oil in a pan and when it is hot we add the washed ñoras, chopped and without seeds, we fry them a little and then we add the 3 – 4 peeled garlic that we also fry until golden brown.
2 Next, add the chopped tomato and fry everything for about 10 minutes. Finally we add the parsley, we fry it 2 – 3 minutes and we crush the sauce with a blender until it is made into a paste, we reserve it until we are going to use it.
3 We put a casserole or paella on the fire with a little oil and add 2 – 3 whole cloves of garlic and fry until golden brown, add the pieces of cod and lightly fry, then remove them to a plate with the garlic and we reserve.

4 In the same oil add the chopped cauliflower and fry it until it is a little golden, stirring often, then add the chopped onion and fry it as well, add the cod mollitas (or smaller pieces of cod) and brown them a little , we add the saffron and toast it for a few seconds.
5 We also add the salmorreta and mix very well with the rest of the ingredients and then add the rice, stir very well and cook the whole for 2 minutes, add the stock or fish stock; We distribute the rice very well and wait for it to start to boil, rectify the salt and place the cod that we have reserved in an orderly fashion.
6 Cook over a higher heat for about 5 minutes and then cook 13 more minutes over low heat, turn off the heat and let it rest for 2 – 3 minutes. We just need to sprinkle with chopped parsley on top and serve with aioli sauce, ready to enjoy. Try it you will love it !!
