Bacalao a la Riojana – My grandmother’s recipe. Ingredients of Cod a la Riojana:

Cod or desalted

2 roasted red peppers

2 onions purple chopped very tiny

1 Bay Leaf

2 Garlic cloves very often chopped

50 ml ( 1/4 cup) White wine

500 g ( 2 cups ) Fried tomato home

Oil Extra virgin olive

1 Teaspoon of Sweet paprika (Paprika)

Preparation of Cod a la Riojana:

1 We dry the cod very well with kitchen paper and we pass it through flour; We put a frying pan on the fire with plenty of oil and when it is hot we fry the floured cod only until it is golden a little, then we remove it from the pan to a plate and reserve it.

2 We put on the fire a pan with a little oil that we used to fry the cod and when it is hot we add the minced garlic and fry it a little, add the chopped onion and a little salt and sauté for about 7 to 10 minutes until it’s squishy.

3 While the onion is poached, clean the roasted peppers from their skin and seeds, cut them into strips and reserve them.

4 When the onion is well poached, add the wine and cook for a few minutes until it reduces and the alcohol evaporates, then add the fried tomato, the bay leaf and add 1 teaspoon of sweet paprika, stir well and cook for about 15 minutes at medium heat and stirring often.

5 When the tomato sauce is done, add the roasted peppers and the juice they have released to the pan, stir carefully and cook for about 5 minutes ; Then we taste the flavor and correct the salt and sugar if we notice that it is a bit acidic.

6 We put approximately half of the sauce in a clay pot and spread very well over the base of the pot; We place the pieces of cod in an orderly manner and with the skin facing down, we distribute the rest of the sauce over the cod and we take to bake.

7 Oven preheated to 180ºC ( 350ºF ), with heat up and down and the grill in the lower part of the oven; Bake for 15 to 18 minutes at 180ºC
