1 part thyme leaves
1 part sage leaves
1/8 part ginger

Preparation
Combine the thyme, sage and ginger in a dark airtight container. Store in a cool, dry place. Then, when you want to make the infusion, grind a small amount of the mixture to a fine powder and extract a teaspoon which should be poured into a cup of boiling water. Strain and have a cup when required.

Thyme cough syrup
60 – 120 g thyme flower leaves
1 liter of water
1 cup of honey

Preparation
Put the thyme and water in a saucepan and put over a very low heat. Let them simmer, with the lid slightly open so that the steam can escape, until the liquid has reduced by half, which will result in about 2 cups of strong thyme infusion. Strain and use the plants to compost. Add the honey to the hot liquid and stir just until the honey has melted. Store it in a glass jar and in the refrigerator where it will keep for 3 to 4 weeks.
