It is a very simple recipe to prepare, and you can also leave this vegetable cake made in advance.
This time I have used tender peas and frozen green beans, but you can use the vegetables you have, this cake is a great “refrigerator cleaner” since it admits almost everything.

- 1 zucchini
- 3 carrots
- 150 gr of frozen young peas
- 150 gr of frozen green beans
- 1 onion
- 4 eggs
- 200 ml of liquid cream for cooking
- Extra virgin olive oil
- Freshly ground black pepper.
How to make Sweet Vegetable Cake
Peel the onion and cut into thin slices. We wash the zucchini very well under running water from the tap, trim and cut into half slices. We put both things, the onion and the zucchini to sauté in a frying pan with extra virgin olive oil. We reserve.
Peel the carrots and cut into cubes, cook them in water for about 8 minutes, cook the peas and beans separately in the same way. Chill under running water to stop cooking and drain.
Beat the eggs in a large bowl, add the liquid cream and beat with a pinch of salt and a pinch of pepper. Add the zucchini and onion as well as the cooked vegetables.
We pour this mixture into an elongated mold, type plum cake, if it is not silicone you should grease it with a little oil or butter to prevent it from sticking. We introduce it in the oven preheated to 160 º C about 40 or 45 minutes, we will check that it is cooked by clicking with a skewer, if it comes out clean it is already ready.
You can serve it hot or cold with a little fried tomato sauce.
