That bees make honey from the nectar of flowers is well known throughout the world. But not everyone – not even all beekeepers – knows what honeydew honey is and how bees produce it.
In this article we explain what is honeydew or honeydew , an exquisite honey that bees make from different secretions of plants and fruits. It is a very different honey from that produced from nectars, although very often bees mix it and beekeepers harvest them together in a single product that is usually called forest honey
1- Honeydew honey: what is it?
To make honey, bees use the nectar that flowers secrete. This is the case in general, but there are some honeys that do not come from the nectar of the flowers, or not only from the nectar. These are honeydew honeys, often called honeydew honeys, honeydew, honeydew, and also forest honeys.
They are honeys that bees produce from the secretions of certain plants, especially trees. These secretions take the form of sugary juices that bees collect and process to store them in the form of honey.
There are two main types of honeydew or mela:
- Honey of vegetable origin. Plant-based honeydews are the result of a large amount of moisture in the soil and high temperatures. Plants generate so much sap that it oozes out from different parts, especially from the petioles. Trees such as oak, holm oak, cork oak, pine, linden, elm or willow are usually honeydew producers. In fact, it is very common to see in summer how the acorns of oaks or holm oaks secrete large amounts of honeydew in the form of foam that the bees eagerly collect.
- Honey of animal origin. These honeydews are produced by small insects, such as aphids or psyllas, that feed on the sap of trees and plants. They consume large amounts of sap to take advantage of its protein and sugar content, and then excrete a part that accumulates on leaves and branches. These excretions, liquid or thick, contain a good part of the carbohydrates in the sap, making them very attractive to bees, which collect them and transform them into honey.
Once in the hive, the bees apply a treatment similar to that used with nectar. Honeydews are digested by a large number of bees, which add enzymes to this sugary liquid. The enzymes generate a reaction that turns the honeydew into honey. At the same time, it undergoes a ventilation process to eliminate humidity. When the humidity is less than 18 percent, the bees consider the honey ripe and seal it in the cells.
2 – What characteristics and elements does honeydew honey have?
Honeydew honey is usually called forest honey, because the most abundant honeydew is produced by oaks, holm oaks… Depending on the isolation of the hives in the forests, we will be dealing with a honeydew honey or a honeydew honey mixed with multi-flower honey, heather honey… In any case, it will almost always be a late summer honey, which is when honeydews usually appear in the mountains.

As honeydew is very thick, this honey is also thick, compact, with a tendency to become very viscous.
Honeydew honeys are usually dark honeys. Its coloration is brown, generally bright 10.2 on the Pfund scale. When hardened, they become somewhat lighter, but always brown.
Taste and smell:
These honeys stand out for their intensity of flavor and their rather discreet smell. The flavor can have hints of licorice, raisins or wood. It is reminiscent of dried fruit and is powerful, sometimes even spicy for the throat, with a malty aftertaste. The balsamic smell is not as intense as in honeys made only with nectar.
Physicochemical properties. Composition:
Honeydew honeys have little moisture, around 16.5%. Its main component is fruit, which can reach 33.78%. Next comes glucose, with 26.39%. Other minor sugars are sucrose (0.21%) and melezitose (0.3%).
3 – What properties does honeydew honey have?
Like all honeys, the one made with honeydew is an excellent sweetener. However, it has slightly less sugar than other honeys.
In terms of properties, its anti-flu efficacy and its good results in softening bronchitis, pharyngitis and other disorders of the airways are recognized .In the case of honeydew honeys with a predominance of honeydews of animal origin, we will find more amino acids and minerals than in normal nectar honeys. This makes it especially suitable for people with nutritional deficiencies, anemia and, in general, deficiency states of the body.
In addition, some research, such as that carried out by the Madrid Institute for Rural, Agrarian and Food Research and Development (IMIDRA) in 2007, shows that these honeys have better antioxidant properties.
